LAMB WITH ORZO

Tender roasted lamb cooked with orzo pasta, wine, and tomato for a rich and hearty Greek-style dish topped with Cretan gruyere cheese.

Ingredients
  

  • 1 ½ kg leg of lamb
  • 1 medium onion
  • ½ cup extra virgin olive oil
  • 4 cups of white wine
  • 1 cup tomato juice
  • 4 cups of orzo
  • 6 cloves of garlic
  • Salt & black pepper
  • ½ cup Cretan Gruyere cheese, grated

  • Large roasting pan or oven-safe pot
  • Knife and cutting board
  • Grater (for onion, garlic, cheese)
  • Oven
  • Large cooking pot for lamb + orzo
  • Wooden spoon for stirring
  • Large non-stick skillet
  • Ladle or serving spoon

Method
 

  1. Cut the meat into portions, season with salt and pepper and place in a non-stick pan.
  2. Grate the onion and put it in the pan along with extra virgin olive oil, grated garlic, wine and tomato juice.
  3. Add 2 cups of water and put it in the oven for 1 ½ hours at 190°C. In a preheated oven.
  4. After about 1 hour and 30 minutes, when the meat is tender, remove the lamb from the oven, place it in a pot and add 12 cups of water.
  5. When the water boils, add the orzo and stir it lightly, quite often for the first 3 minutes.
  6. After about 10 minutes the food is ready. Add the grated gruyere and mix.
