Healthy Mosaic Cake

INGREDIENTSย 

  • 250 g digestive biscuits (wholemeal, sugar-free if preferred)
  • 200 g Greek strained yogurt 2%
  • 4 tbsp unsweetened cocoa powder
  • 4 tbsp honey
  • 3 tbsp peanut butter
  • 3 tbsp low-fat or plant-based milk
  • Optional: chopped nuts, cranberries (sugar-free), vanilla extract, 1 tbsp liqueur

COOKING INSTRUCTIONS

STEP 1 | Break the biscuits into small pieces (not crumbs).

STEP 2 | In a bowl, mix the yogurt, cocoa, honey, peanut butter, milk (and optional vanilla/liqueur) until smooth and well combined.

STEP 3 | Add the biscuits and any extras into the mixture. Mix thoroughly until everything is coated.

STEP 4 | Place cling film on a counter or into a loaf pan, transfer the mixture and roll into a log shape.

STEP 5 | Freeze for 2โ€“3 hours until firm.

STEP 6 | Slice and serve!
