- 3 large eggs
- 1 tbsp unsalted butter
- Sea salt and freshly ground pepper
- Creamy cheese (optional)
- Toasted bread
- 1 tbsp chopped chives
STEP 1 | In a small bowl, lightly beat the eggs.
STEP 2 | Heat the butter in a small saucepan over medium heat until it foams, then add the egg mixture. Using a heat-resistant flexible spatula, gently scramble the eggs into the center of the pan and allow the wet parts to run down the perimeter. Cook, stirring the eggs constantly with the spatula, until the egg mixture thickens, for 2 to 3 minutes.
STEP 3 | Remove from heat and serve with toasted bread. Season with salt and pepper, add cream cheese (optional) and chopped chives.
