INGREDIENTS
- 3 ripe bananas
- 3 eggs
- 40 g olive oil
- 230 g all-purpose flour
- 1 tsp cinnamon
- 1 tbsp baking powder
- 100 g dark chocolate 70%, optional

- Fork (for mashing bananas)
- Whisk
- Spatula
- Loaf pan
- Oven
METHOD
- Place the bananas in a mixing bowl and mash them with a fork. Add the eggs and olive oil and whisk to combine.
- Add the flour, cinnamon and baking powder and whisk again just until combined (do not overmix to keep the cake fluffy).
- Pour the batter into a loaf pan and bake at 180°C for 45 minutes.
- Optionally fold in chopped 70% dark chocolate for added richness.
NOTES
- For a moister texture, use very ripe bananas with brown spots.
- You can replace some flour with oat flour for extra fibre.
