INGREDIENTS
  

  • 3 ripe bananas
  • 3 eggs
  • 40 g olive oil
  • 230 g all-purpose flour
  • 1 tsp cinnamon
  • 1 tbsp baking powder
  • 100 g dark chocolate 70%, optional

EQUIPMENT

  • Mixing bowl
  • Fork (for mashing bananas)
  • Whisk
  • Spatula
  • Loaf pan
  • Oven

METHOD
 

  1. Place the bananas in a mixing bowl and mash them with a fork. Add the eggs and olive oil and whisk to combine.
  2. Add the flour, cinnamon and baking powder and whisk again just until combined (do not overmix to keep the cake fluffy).
  3. Pour the batter into a loaf pan and bake at 180°C for 45 minutes.
  4. Optionally fold in chopped 70% dark chocolate for added richness.

NOTES

  • For a moister texture, use very ripe bananas with brown spots.
  • You can replace some flour with oat flour for extra fibre.
